Abstract

Yeasts are fungus that man has used since ancient times. Among yeast species, the Pichia genus is a model organism for the biosynthesis of valuable products and is also used in biotechnology. This review compiles information on the advances and challenges of the last decade in using yeasts of the genus Pichia, their biotechnological capabilities, and their use to obtain bioproducts and polyols. Innovative solutions for obtaining metabolic products for industrial applications involving process engineering are also discussed. Overall, this review addresses an overview of the biotechnological potential of yeasts of the genus Pichia, including future perspectives and open questions that still need to be answered.
